Annoying word problem

I have mac office 2011.
Why the hell does it insist in being in US English ???
I have changed the default to UK English, yet it still manages to try and change my sodding s's to z's. I swear this macbook is going out of the window soon.
PLUS
Why is the formatting on microsoft products a load of rubbish, things jump around the page when you're trying to organise a 12,000 word document. I have that iWork software and that works just fine, but uni insist on using word.
