Well I am no chef at all but I had to share this as it worked a treat and got the thumbs up from non BB around me too!
If you have a George Foreman type thing this is perfect- if not I suspect a hot pan or skillet would do.
Ingredients:
Pork escalopes/ loins- I bought a pack for £5 in asda and cut the fat off as best as I could
Marinade:
5 or 6 birdseye chilies (use as much as you like heat wise)
Big knob of ginger- about 2" peeled
2 tbsp soy sauce
2 tbsp water
blend all this in a mini blender until smooth- I added a tbsp vinegar as this is a common ingredient in vindaloo (or so I have heard) to tenderise meat.
I left the meat to marinate in this overnight and cooked them on the George foreman and they were just lovely. I know it sounds like such a simple recipe, but the marinade meant the meat was very moist and with the G.F I didn't even burn it - which is amazing for me!
I served it with some steamed veg but would consider doing with some rice or noodles
lots of chilli made it really nice!
