Healthy Sauce Recipes 12 September 2009 11:06 (permalink)
Can anyone tell me any sauce recipes which are healthy, any kind of sauces at all really I'm just sick of dry pasta/chicken/potato/beef etc. Anything to add moisture and taste.

    Dont have any recipies off the top of my head but the nandos range of sauces are pretty healthy

        All good ideas above. One of the simplest things ever to do is to tip a pot of salsa over some chicken or fish and then cook it.

        Also, perhaps marinading your food might help jazz up the flavours

           Fry a large onion, some mushrooms and some garlic until soft, then add some thinly sliced tomatoes, some tomato puree, a tin of chopped tomatoes and 2x vegetable stock cubes (just crumble them up). Simmer for 10 mins or so then you have enough sauce for 2-3 bowls of pasta. I sometimes add some sweetcorn and/or some chilli powder and it makes a delicious sauce to go with diced chicken and pasta. You could make a large batch and freeze it in portion sizes to bung in the microwave if youre in a hurry.

            I've just made a new one to go on pasta;

            Last few dregs of a plastic squeezy bottle of Dijonnaise, 100ml or so of boiling water, squeeze of honey, touch of salt and lots of black pepper, plus a dribble or two of white wine vinegar. Give it all a good shake and it make a cracking glaze type sauce to make pasta more interesting.

            Have now washed out and kept the bottle for more experimentation!

              1tsp ginger paste
              2 tbls Soy
              4 tbls Chili + Garlic Sauce
              1 tsp chinese 5 spice
              salt + pepper to taste

              tastes best if left for a while but can be cooked straight away... also search for my Rio Grande Sauce thats majic imo
