Was looking through the recipe forum earlier and spotted a recipe for brownies that used low fat soft cheese. I've also been reading a lot about Quark and planning to try some, so thought i'd adapt the recipe and see how it came out.

First off, where has Quark been all my life...all that protein, no fat and it doesn't taste like crap..and with a spoonfull of honey it tastes even better!

Now, on to the brownies...



Oh my god they're good, and dead easy to make....

- Preheat the oven to 150c

- Grab a mixing bowl and drop in:

125g of Half Spoon sugar (you could also use Splenda)
75g of Cocoa
100g of Whey Protein (I used MP Unflavoured Impact Whey)
400g of Quark
3 large eggs (maybe try 2, the ones I made for good but tasted slightly eggy)
Half teaspoon of Baking Powder
Pinch of salt

- Mix it all together until you get a smooth, glossy batter. Don't be tempted to overmix it, just until it's all nicely mixed in.

- Pour into a non stick cake tin, preferably one where the bottom pops out (it'll be easier later)

- Bake for 35 mins or until the top starts to crack.

Turn it out to cool on a wire rack, slice into 8 and then start eating... ;-)

Here's the best bit, each slice has:

203 calories, 4.8g Fat (0.8g Saturates), 20g Carbs and 20.2g Protein!

Texture wise they're very dense, a bit of a cross between a brownie and a baked cheesecake. But really tasty with a cuppa.

You can try egg whites, just have to treble the amount so in place of 2 whole eggs, use 6 whites.

Glad you like the recipe. Try out with a tablespoon of orange extract as well for choc orange brownies. Or with some mint.

Hey, all credit to you for a cracking recipe! The one I adapted it from was on another site, so didn't realise you were on here too.

Cheers for the egg white tip, will try that..might reduce that slight eggy taste too. Choc mint brownies sound good...maybe fresh raspberries too.

You can do a few things if you dont like eggs.

I find a tablespoon of ground flax mixed with a tbsp of water replaces one egg.

Peanut butter also works well, use 50g of it in place of the eggs for a smooth fudgy like brownie.

if you do use PB then reduce the cocoa to 50g.

For sweetener you may want to try a mix of a quarter cup of splenda with 50g blackstrap molasses, the molasses has a far richer and deeper flavour which compliments chocolate extremely well. Plus its lower carb as molasses only has 60g of sugar per 100g and its like a very thick syrup.

Might be lovely, might be horrendous with strawberry whey, only way to know is to try!

Thanks for the tips TIO, will try some of those on the next batch. Other thing i've learnt is to keep them in the fridge. I had them in a biscuit tin in a warm room and half way through the week they'd grown fur :-(

Thinking I might go with lower/no egg and some Peanut Butter on the next batch. Good call. Might even throw in some chopped walnuts and raisins too.

Damn strawberry whey is a no go, makes it taste horrible!  But I can tell it would have been delicious with unflavoured whey, might buy some just for this recipe.

I used Choc Mint Protein and my next batch later on is going to be with Rasberry Ripple.

They have the consistancy of a normal cake - Spongy!!
and they are moist like a normal cake - can't believe it!!
 
I must admit when you add it all together you think how the hell is this going to work but as said it just seems to work - Cream Cheese and no Flour who would have thought it!!
 
I am dieting at the moment and these are going to be a life saver for me!!
I would have rather had a plain choc rather than Choc Mint but that is the only protein other than Rasberry ripple in.

Also to answer your question I balked in the oven for about 45 mins at 140 as it is a fan oven. I checked on it every 15 mins to make sure I didnt over do it and to keep it moist took it out when a knife didn't quite run clear.

Great stuff - I have had x2 pieces today. (one mid-AM and one mid-PM)

Doesnt work with CC, different texture. It wont rise.
Just a quick question for the iopener or anyone else who has a view.

Would it make a difference to add more/say double the protein powder????

The amount i have in the recipe is the limits it will take. If you put more in you risk it being very dry and wasting a few quid. Up to you though.
