Fancy having a go at this but won;t be consuming the gluten,

Eddie do you have any experince with replacing the gluten with a xanthan+whey (or casein) + a little glycerine type combo?

I have made this recipe with whey protein only before and it does work quite well. Its a little drier due and grainer to the different properties of they whey and it doesnt rise quite as much due to the no supporting structure from the gluten.
 
I think Xanthan gum would improve it a little bit as it happens.
 
Heres a shot of one made with whey, but with far less eggs. I think its safe to say that with more whole eggs and the cocoa powder in there it should be quite doable. You may need to up the fat content to encourage moisture retention (whey just leaks water and doesnt hold onto it like gluten does, so they dont freeze well)

    Cheers, yeah I was hoping that xanthan (or similar) would hold it together and the glycerine would work as a humectant.

        TIO I have been posting on your threads in UGM do you not hang out there anymore?
        Followed your recipe, cut off the top and sides as they don't taste good and are hard, sliced cake in two and spread peanut butter in the middle instead of your frosting. Also put chocolate spread on the top and sprinkled with mixed chopped nuts. The recipe is perfection now my friend try this out!!! Here are pics:
