They look good though mate.

Just a tip for the future if you make them again. If you think the mixture looks too sticky just add some more whey into it and stir as it will help to bind the mixture together more.

Asda does indeed sell quark I know coz I bought it, but it's a different brand if I recall (I can't remember the name though), go to asda next time you're shopping and ask a member of staff.

RE: NEW RECIPE - High Protein Strawberry Fudge Bars... - 01 February 2007 10:03
Hi Gaz. I made up my first batch of these yesterday (don't say - i know jelly has gelatine...).

I used the exact proportions in the original recipe to make a half batch but they did not come out right, although they did look exactly like the pictures and the mixture was like the descriptions.
Problem is that they did not set hard. They stayed as a sticky goo after a few hours in the fridge. I managed to slice one up and wrap it to take to work but after a few minutes it had almost melted and was soft like greasy play dough. Any idea of what the problem was? I think I could try adding more whey to bind the mixture next time...

Another question - are these bars made to be eaten straight out of the fridge? If they 'hold' out of the fridge, how long are they supposed to keep a solid bar from once out of the fridge?

Although my consistency was abit off, can I just say that the actual taste/texture of these bars are the best I have ever had out of any home made bar!!! I enjoyed the greasy play dough at work and I actually froze my soft goo ones and had one last night. It was amazing lol! I think I might actually prefer them frozen and have them melt in my mouth... To be fair though they do have a higher proportion of fat than most bars and fat does make most things taste good.

Well done mate. I won't be put off by the first batch not working (mixture seemed only slightly off) - definitely going to have to try again as they taste so damn good.

Hi mate glad to hear you like them.

Not sure why they should be sticky and runny, did you follow the instructions as to adding all the liquids, i.e. quark, st ivel gold and the peanut butter? ? ? i find it can be too sticky if you put all of it in at once, if you put some of the quark, st ivel gold and the peanut butter in and then mix and then add the other quark, st ivel gold and the peanut butter and then mix again, it normally works fine.

If it does look too sticky in the future then add more whey.

I followed all the instructions and made it up properly as far as I can tell.

I have played about corrected the bars since last post. I just re melted the mixture, mixed in more whey until it went firm and put them back into the fridge. Just had a look and they have set fine in an hour. They sliced into bars easily, are no longer sticky and 'hold' as a bar. Just wonder if/how long they will hold out of the fridge (they should be fine from first looks).

Thanks for the recipe, top stuff mate. Any ideas of how it could be adapted for a bulking bar? I would love a bar with this flavour/texture but with oats in place of some fats.

Bulking bar, yes mate, just have more.

Sounds good, well, they last a fair while for me, when i am out and about and take them for my meals, etc... they have lasted 12+ hours.

Mine ended up as wallpaper paste which wouldn't set. Only difference I can tell is that maybe i used 2 or 3g too much honey, and i used ground brazil nuts instead of chopped almonds. Do the chopped almonds help bind it together?

They will a little bit, the whey helps to bind it though, if it gets runny, add more whey.

Gaz mate, ive bought all the ingredients for the protein bars and im ready but the sugar free jelly I bought is the "hartley's" one where 1 sachet is kinda split up into to small sachets that you can rip down the middle, regardless of this both "mini sachets" are 23g, is this considered 1 packet or 2?

Cant wait to try these out so let me know you badman g!

Thanks :D

Hi mate.

I normally use 2 sachets, i.e. split the packet in 2 down the rip down the middle and use both.

thx mate, cant wait to try these out, making em now, ill let you know how they go but not eating them until im at uni tomorrow (doesnt fit in with tonights diet, im on a cut!)

Love the idea of low carb, moderate fat, protein bars, the majourity of protein bars I have seen always had a significant amount of carbs coupled with some fat which didnt go down too well when trying to keep my bodyfat in check, im expecting big things out of these babys! ill give you my verdict tomorrowz :D

nice one bruv! :D

Thanks mate.

Yeh, when i made them that was the intention, trying to keep carbs low in a protein bar with decent fats in there too.

I am pretty proud to be honest.

lol just made it, feck me its sticky as hell! I think next time I may add a tiny bit of water, it was really hard to stir,

Oh gaz you know you mix the hot (microwaved) peanut butter, butter, and quark together, then pour into a bowl with whey + jelly and mix, doesnt protein loose its protein content when heated above a certain temp? and thus could possibly loose some of its content due to the hot mix being poured on it?

Well I made them last night and they tasted great, a bit like Big Fella's ones. The only problem was that I couldn't find any Whole Earth peanut butter in my supermarket so use regualr smooth stuff. Not sure if it is down to the setting agents in the sugar free jelly but my bars didn't really set with the Highlights flavouring, but they tasted good enough that my brother and I ate it all last night!!!

Sorry about lack of pics I don't have a digital camera

Just to comment on these bars... really easy to make but dont like the taste of them, way too sickly but i dont personally like peanut butter too much, perhaps if people dont like the taste it then they could replace it with other nut butters like cashew nut which is my personal fave my boyfriend "trentreznik" suggests using nutella and taking out the jelly, obviously this will boost the fat and sugar content but everyone needs a treat once in a while!! does any one think this will work? it was fun to make though

grounded armons, my right wrist feels like steal hahahaha

i had a few problems cos mine set too early... ill psot a pic, like 3/4 of the mix looks ok but i struggles with a bit because it was setting, they do actually taste very nice,

so thankyou very much mate, and let me know if you come up with any new protien bar ideas :)

Replacing jelly in this mix would make it not set...

maybe find flavourless jelly(not sure it exsists, you'd want geletine crystals?) then youd not have chocolate mixing with strawberry etc

Ill be making these soon, although i left quark at gf's so i guess i gotta go for a little drive first

Will get some picks up, then ill modify the ingredients to see what happens!

That St Ivel is awesome, 200kcals vs 600 in normal butter!!!! awesome!

Add a bit more whey if they dont look like setting and mix that in and then they will set better.
