Protein Bars - A Must For Snickers Lovers!! (Pictures) 21 February 2010 22:03 (permalink)
Alright Guys,

I've been messing around with different recipes for a while and I have definitely hit the spot!! 

Ingredients

1 1/2 cups (140g) of porridge oats
A heaped 1/2 cup (150g) of CRUNCHY peanut butter
1 cup of chocolate whey (3 scoops) (I have used both Optimum Nutrition and STC)
125ml-ish of skimmed milk
Tablespoon of honey

1.  Add the oats and the whey to a mixing bowl and give a quick mix
2.  Add the milk and peanut butter
3.  Get stuck in with your hands!!! (You HAVE to do this! No Spoons!!)
4.  Place into non stick tray and pat down to about and inch thick (you may wish to line with greaseproof paper)
5.  Drizzle the top with honey (you may wish to leave it out, but I think it makes the bar)
6.  Chill in the fridge for 30 min (meanwhile, pre heat oven to 180 C/Gas mark 6)
7.  Bake in oven for 6 minutes
8.  Leave to cool (pick at if you wish!) 
9.  Whilst in the pan, slice into bars with a knife (leave in the pan)  
10.  Put into fridge overnight to settle (tastes much better this way) 

I honestly think these taste like snickers bars (but a healthier version!!)...problem is it doesn't matter how healthy they are when I'm going through a batch a day!

        Hmmm they look nice.  I would have thought the oats would still be a bit uncooked though after only 6 mins in the oven?

          I've found that because they are porridge oats they are pretty soft anyway...I've seen a load of recipes with oats that don't even get cooked!! To be honest I only put it in the oven to firm it up a bit to add a bit of texture. It helps it hold its shape a bit also... give it a go you won't be disappointed if you like peanuts/chocolate :)

            Ah ok cool, well as we know oats can be eaten raw anyway (think muesli!) so it's no problem, just wondered why you would put them in the oven for such a short time, but I understand your thinking now!

            The problem I find when making anything like that (sweet stuff basically) is because I'm such a greedy pig, I would eat the lot - hence I don't tend to bother LOL !!!!

              haha :) I am the exact same...made my first batch yesterday night and its finished!! I've just pulled another load out of the oven!!

                  This sounds really good, i'm going to have to try it. Do you think it would work with nesquick powder and unflavoured whey instead of chocolate whey?? If you cook whey, does it denature the protein?

                    Can't Tell you how it would taste with nesquick and unflavoured whey - no harm in giving it a go if thats all you've got though! The 6 minutes in the oven I don't personally see as being long enough to denature the proteins. All the heating does is firm up the outer layer...I doubt the rest of the mix gets very hot!

                        Its about 135/140g of oats and 140/150g of crunchy PB.  It was around 3 scoops of whey.

                          Also, slice it whilst its in the pan after it has come out of the oven and then put it in the fridge over night.  This allows the honey to seep into the cracks/underneath, which makes it taste a whole lot better.

                                        Thanks Dal, got these cooling in the fridge as I type.  Added a few raisins cos thst's how I roll.
