Well, I've just had my first little 'batch' of these and they were pretty damn good, but they didn't have that crispness to them....how do I get this?

Yeah I par boil them too. Makes them a little bit more tender. Keep the skin on though, just give it a good wash.

I skin, chip, put in a plastic food bag with EVOO and nandos peri-peri salt, shake shake shake, on a hot, deep, baking tray and cook for 15-20 minutes, turning frequently and they're amazing!! At work I skin, chip and deep fry them and they're great too, not savoury like baked chips, but more sort of like a donut taste, very nice! Can't beat good old sweet potatoe mash though! Don't even need any salt, butter or evoo.... Beaut The joys of eating what you want!

I know that if you shallow fry them and shake to form a 'coat' so to speak on them before you put them in the oven it helps to make them crispy..that's what i do with my roast potatoes (when I am allowed them) lol x

If sweet potato is a little to sweet and sickly for you like it was for me use butternut squash in exactly the same fashion, lovely!!

Tried these other day, peel/chop/wash added olive oil, parsely, nandos peri seasoning and pinch of sea salt and in put them in the oven for 45 mins. Boy they taste sooooooooo good!
