Thai Style Sweet Potato and Tuna Cakes

Thought id share something my missus made us. 600g Sweet Potato 2 Cans Tuna 2 Spring Onions 2 tbs Lime/Lemon Juice 2 tbs Soy Sauce 1 Garlic Clove Ground Oats Olive Oil Salt and Pepper 1. Peel and chop sweet potato and simmer for 20 mins 2.Drain and mash 3.Add chopped spring onions,drained tuna,lime/lemon juice,soy sauce,crushed garlic and seasoning to sweet potato and mix well. 4. Divide into 6, shape into cakes and coat each one in ground oats 5.Fry gently in olive oil and finish off under grill. Per fish cake Kcal: 221 Protein: 17g Carbs: 28g Fat: 4g Next time ill add 1 extra tin of tuna to up the protein.

Hmmm they look good. I would maybe put a bit of lemongrass in (if you can get it) for an even more authentic Thai taste.

Lemongrass sounds good RHF ,, the Mrs made these because ive eaten so much Tuna the thought of it makes my stomach churn but i was surprised i could not taste the tuna at all .. DV im not sure i could have eaten 4 i was stuffed after 2 but this was just a mid day snack .. and you can tell the Mrs made it because there is greenery on the plate :)
