We are all so busy with our jobs and training that sometimes we feel we haven't got time to cook, but with this quick and easy stir fry you will be able to enjoy a great tasting healthy meal in minutes!
Fantastic flavours and tastes which are easy to follow and that you can purchase from all good supermarkets. Instead of beef why not try using chicken breast, pork or prawns. Make the dish in the same way as the beef just substitute for a different protein source. Or accompany main dish with steamed or boiled rice instead of egg noodles.
This dish also makes a fantastic vegetarian option if you omit the meat.

Ingredients
Beef Stir-Fry
70-80g rump / sirloin steak
2 tsp rapeseed or olive oil
1 red chilli, seeded and sliced
1 tsp tamarind paste
1 tsp brown / palm sugar
1 tsp light soy sauce
½ lemongrass stalk, tough outer leaves removed and sliced thinly
25g bean sprouts
10g sliced red peppers, raw
10g broccoli florets, raw
10g cashew nuts
½ juice lime
Fresh coriander to garnish
Egg Noodles
100g fresh egg noodles
Salt to season
Boiling water
Method
Beef-Stir Fry
- Remove fat, thinly slice the beef. Heat wok or frying pan then add oil over a high heat
- Add the beef, lemongrass and chillies, stir for 1 minute but do not take of heat
- Add the tamarind paste, sugar and soy sauce; stir
- Put in vegetables and bean sprouts, cook for another minute then add lime juice
- Serve on a bed of fresh egg noodles, garnish with cashew nuts and fresh coriander
Egg Noodles
- In a large saucepan boil water and add a touch of salt, if required
- Carefully drop in fresh egg noodles, stir with fork to separate noodles
- Cook for approximately 4-5 minutes or as stated on pack
- Strain carefully when cooked

This is a simple and easy to make recipe, ideal for the busy trainer who wants a quick but different nutritious meal. It's high in carbs and protein with an array of vitamins and minerals from the vegetables. Like Paul says, you can vary your meats - just make sure the cuts are lean.
If you want more protein, then use more beef. If you want more carbs, have more noodles. This is an ideal 'bulking' recipe.
