Low carb desicated coconut recipies? 02 September 2009 21:10 (permalink)
Looking to supplement my diet with MCT's and desicated coconut seems a cheap/easy and freely available (i.e available in all supermarkets) way to do it. Wanting to use on no carb days so carbs need to be kept to the very minimum. Any ideas for recipies? Adding to a protein shake is convenient but a bit boring

    Sugar free macaroons work well.

    Also making thai coconut curries work very well if you use coconut milk.

    Also the recipe for low carb brownies on UGM can be altered to use coconut vs the cocoa powder etc.

    Also try 50g of flax and 200ml coconut milk, it makes awesome low carb porridge.

          Sounds like a good variation - what quantities would you suggest? (The same g as cocoa)

              I use 50g of coconut with the variation and also add in a little vanilla. If you want you could try 50g coconut and 25g cocoa for choc coconut.
