Does anyone have a good recipe using quinoa?
 
One I found very easy and tasty is:
Double broccoli quinoa salad.
In a food processor mix cooked broccoli, nuts (any type), fresh coriander and lemon juice, add a small amount of olive oil making a pesto. Mix the pesto with cooked and drainned quinoa plus some small florets of cooked broccoli. Serve it cold toping it with half a sliced avocado. Yummy yummy!

    That sounds like a Heidi Swanson recipe? She's got loads of good stuff using grains and pulses on her site, but most of her recipes are veggie/vegan. It helps that she's a photographer so it always looks gorgeous.

    I recommend her courgette cake (zuchinni bread)..

      I don't know where the recipe came from, and I have also made my own modifications. I normally have vegetarian/vegan recipes with a side of roast chicken! Thanks very much for the link!

          I really like quinoa and eat it fairly regularly, so here are some tried and tested ones:

          Quinoa, roast veg and goats cheese salad
          Cook some quinoa with a teaspoon of veg buillon powder in the water and some herbs. When its cooked mix through reoasted vegetables, crumble in some goats cheese, stir and serve.

          Quinoa Pilaf
          lightly fry and onion, a couple of sticks of celery and a leek in a little bit of olive oil. Add a tin of drained chickpeas,  1 stick of cinnamon and 4 cardamom pods, 100g quinoa and 250ml veg stock. Boil and cook for ten minutes. Ass 25g sunflower seeds, 25g raisins and a bit of lemon zest and cook for another ten minutes til the liquid has been absorbed. Stir to separate and serve.

          Cashew and Sesame Quinoa
          cook 140g quinoa in 360ml veg stock for about 10-15 mins until the ater has absorbed. Stir through 4tbsp peas (I tend to use frozen ones that are defrosted and just chuck them in at this stage- they warm through in the quinoa) and  one julienned carrot, some spring onions, 50g cashew nuts, 2tsp sesame oil, 2tsp lemon juice, and 1tbsp tamari. Stir and serve.

          Fiery Quinoa
          roast 250g quinoa in a frying pan until it browns lightly and starts to pop. Menawhile, lightly saute and onion til golden. Add 2 cloves of garlic, crushed, 2 bay leaves, 1tsp dried crushed chillies, 1 can chopped tomatoes and an equal amount of water, then stir in the quinoa, cover and simmer for 2-0 mins until the liquid has been absorbed and the quinoa is tender.

          It can also be mixed in with cooked rice (I like that) for a variation for your  'carbs on the side'. Makes it a bit interesting and varies the texture.

          You can also cook it in half soya milk, half apple juice (just to sweeten it) with some cinnamon.and vanilla extract and have it in place of porridge for breakfast.

            One-pot chicken & chickpea
            Prep Time:- 10 mins
            Cooking:- 30 mins
            Serves 2

            Ingredients:-

            • 1 tbsp olive oil
            • 2 chicken/turkey breasts cut into large cubes
            • 1 white onion
            • 2 garlic cloves , finely chopped
            • 400g can chickpeas in water
            • very finely chopped zest of ½ lemon
            • 150g quinoa
            • 1 Kollo Chicken stock cube 500ml boiling water
            • 1 head broccoli , broken into florets
            • Any other veg you fancy, broad/runner beans etc
            To Cook:-

            • Pour Olive oil into large non-stick pan over low - medium heat
            • Cut onion in half (end to end not through middle) then slice finely into half moons
            • Add onions to oil and gently soften for 4 - 5 mins.
            • Put meat into pan with onions and stir occasionally until meat just turns white on all sides, approx 3 – 4 mins.
            • Add chopped garlic and plenty black pepper stir through for 1 min
            • Add ¾ lemon zest, stir once, add chickpeas including the water from the can and quinoa and chicken stock
            • Turn up heat and just bring to boil, then turn heat down to low and cover with tight fitting lid.
            • Should just simmer, no more, for 20 mins
            • Prep broccoli by cutting into small pieces
            • After 20 mins take lid off and place broccoli on top of the ingredients in the pan, re-place lid and leave for 10 mins.
            • Add remaining lemon zest, stir once, and serve in bowls.
