Nice read Eddie - the big step is leaving the convenience of rubbish food behind you IMO, once that's done, you're laughing.

I would however comment that I prefer my meatloaf recipe with added flax to level out the fats a little if it's to be used as a staple

(i.e. planning a few servings a day)

I think i may pick up some TVP when im shopping next as i want to cut down on my beef intake.
