I know that smaller meals more often are better than 3 large meals, but what should I be looking at as a maximum intake of calories, before the body stops being able to absorb it and it goes to fat?

'Absorb' is different to 'absorb use in a way that will help me health and physique wise'

I'm afraid there's no answer to the question due to individual differences in gut function.

What gets turned to fat has a lot to do with overall calories consmuption more than eating at each meal

We know from experience long gaps means that your body will store to bridge the gaps - but this is not necessarily the same thing as the fat that brings adiposity - fat round your belly comes from storing a surplus of calories over what you use.
Fat storage due to not needing at that time means that you should use it later - the problem is that many people store to eat later - then eat lots later, and store some more but didnt use up all they stored last time - some is left - over time those little bits add up.

If you eat small amounts for frequently, you can see you are going to have less stored - because you are going to use what you have, less stored because food is coming soon so no reason too, and less to store as well.
