Chewy beef? - 18 April 2008 19:04
I love beef but when I eat it I chew & chew but it I can't chew it enough to swollow it. The only way I can describe it is like chewing chewing gum, you keep chewing it and don't swollow.

Are my teeth not sharp enough? Or am I just a freak?

Did you buy stewing or braising steak? This needs to be cooked for a long time to make it tender.

sounds like a cheaper cut - try filet steak and see if you have the same problem. The only drawback is that it's very expensive!

you can use meat tenderiser and beat it with a meat hammer before cooking if using a cheaper cut - however i never go less than topside cos its so tough.

Meat tenderiser is high in salt - but the hammer method is very effective if you take your time, and a wooden hammer is just fine as you need to tap and turn not belt the living daylights to get the best results.

I bought a fillet steak. I'll give the hammer a go.

must have been a crap cut of beef, fillet is usually the best.
use the end of a rolling pin to tenderise

Over cooked & poor quailty probably. I use serloin and sometimes fillet

My Mum cooked it and she does tend to do this alot, especially when she cooks for me.

soak it in a tin of pineapple chunks with natural juice overnight

then in a very very hot pan sear the meat on both sides for a minute

place in a oven for a few minutes to cook through all the way, leave to rest for a few minutes, Serve with pineapple chunks with BBQ sauce
