do the engine swap and inform DVLA, they will issue you with a new V5 with the engine number changed. as far as im aware it will not show the old one as there is not space for that on the V5, same as when i resprayed the car they just changed the colour.
You dont have to worry about informing insurance as its not a performance upgrade etc it just a straight standard engine swap.
