I know the game isn't all about strength, but what sort of weight would a one of these guys over 6ft be shifting in Deadlift and squats? Just so i know I'm on the right track.

there is a 'standard' on the wru site somewhere, (or there atleast used to be) im sure it was something like a 220 squat for a prop and a 130 powerclean or something

At Prem academies if you expect to get a contract your looking for lifts of around 140% Body weight. That is at 18. Now depending on what position you play obviously weights are going to vary also depending on age. How old are you at the moment?

Depends on position to an extent - the forwards are obviously going to be stronger than the backs because of the scrummaging and rucking they have to do. To give you some idea of what some of the guys can do, Andrew Sheridan is 6' 5" and can bench press 210kg, squat 275kg and deadlift 300kg.
