I generally eat an egg-white omelette with broccolli in it for breakfast with whole grain bread. I was wondering if I diced up an uncooked sweet potato very finely and cooked it in the omelette would cook throughly enough? Or a good idea to microwave it for a couple minutes first? Would be a nice change up instead of eating bread as the carb source for that meal.

the smaller the pieces, the easier and faster it cooks, IE centimeter cubes cook in 5 minutes rather than a 1-hour baked potato. i think it should work. sometimes I use a grater for my potatoes as if it was a carrot, works well.

Yes you can. Cut the sweet potatoe into about 1cm cubes. Put some olive oil in a pan and throw in the sweet spud and 'fry' it for a few minutes. It will start browning on the outside pretty quick so keep an eye on it and keep it moving. Once the outside is nicely browned add some water and 'wet' fry it to cook it through. When the water has evaporated test a couple of the cubes to see if it's cooked. If not add more water and repeat. When you're happy with the texture throw in your eggs. It's not as complicated as is sounds lol. Also try sweating off some finely chopped onions and grated courgette with eggs...scrummy!
