I currently do a pretty solid hour of running/circuit training five times a week with two rest days. Do you think I can increase this or would that be overdoing it? I don't get DOMS or anything anymore, and really enjoy it so the more I can do the happier I'd be.

Also, do you think I'd see better results if I rest more or am I alright plodding along as I am?

only you can know how you feel,as long as you eat/rest enough you should be ok,at least one day IMO is good to replace some glycogen to the muscles,why not stay doing what your doing or mix your training up a bit.
