Pasta + Some mayo.
In a tomato/garlic/onion/herb sauce with pasta.
Jerk seasoning on it.. with rice?
Savoury rice? Cous cous with veggies/lemon juice thrown in?

Change protein source if chicken is boring, turkey has a different flavour? Pollock(white fish)? Tuna? Lean mince? Soya mince?
Theres alot to choose from mate.

The GI of the other food will change with you adding protein, from the chicken, to it anyway.

Basmati rice, wholemeal pasta, etc...

I'm loving chicken and sweet potato wedges cooked with sea salt and olive oil. If they wedges come out crispy I could eat them all day
