Do sweet potatoes freeze well? - May 10 2008 18:09:03

I've just made a big pot of sweet potato and kidney bean stew. I know from previous experience that regular potatoes don't always freeze particularly well, are sweet potatoes any better to freeze?

normal pots freeze ok dont they. Stick them in microwave and they pretty much fine i think. maybe a bit stodgy but o well.

When I freeze spuds in a soup or stew they often go quite stringy. 
Anyway, the sweet potato and bean stew is in the freezer now, so I'll find out when I eat them whether or not they freeze.

You should have potatoes straight from being cooked first time and eaten hot like that or if you've already cooked them for use aother day then have them cold. Reheating alters the profile of starch and makes it alot harder to digest. An invaluable gem i picked up from James when he wrote a diet plan up for me last year.

Yes, that has been my experience in the past when I've cooled/frozen potato dishes and then reheated them. They just aren't the same, but sweet potatoes have a slightly firmer texture when cooked so i'm hoping they might turn out more palatable.
Only time will tell.

strange, i've always found sweet potatoes to be softer than white potatoes.

I would not recommending eating cold, reheated nor thawed pre-cooked potatoes nor sweet potatoes - they will not harm you, but you will not get the best nutrition and if you have bowel complaints, then this may exhasserbate symptoms

Maybe, but I have slightly undercooked them so when they are reheated they don't turn to sludge.
James, I wasn't aware that spuds were particularly nutritious in the first place. Are sweet potoatoes any better nutritionally?
The stew I cooked them in has all sorts of pulses and legumes in it, which I'm will help me stay full on a cut.
