is olive oil counted as a good fat? what about sunflower and would frying something in olive oil be healthier than sunflower or would this be damaging the oil. some of this healthy oil/unhealthy oil confuses me don't know what ones are good or bad.

For high-temperature cooking, oils low in polyunsaturates are healthier (as polyunsaturates form trans-fats & oxidise above 100 degC), therefore Olive Oil is better than Sunflower Oil. For taste reasons, Sunflower Oil is sometimes used. As Sunflower Oil has shed-loads of omega-6, compensate for this by increasing your omega-3 intake.
