salmon fillets

im going to get some frozen fillets tomorrow from iceland, but have no idea how to cook them. I want something very (i mean very very) easy to cook and that i can put in the fridge for the week! I was thinking of something like marinade it in lemon juice, salt and olive oil and frying them? dont kno! recipies much appreciated!

very easy foolproof recipe 1) dont thaw out all the steaks at once - there's no need to - just take out one appx hr before cooking. 2) heat a little olive oil in a pan. (keep the heat mediumish) 3) season defrosted salmon steak with salt and pepper. 4) place steak in hot oil (it should sizzle) and fry for 2 mins 5) turn steak over 6) add some finely chopped garlic, capers, olives, chopped tomatoes, basil, parsley anythin u want really (this bit is optional) 7) squeeze half a lemon over the salmon and add a knob of butter - now lower the heat and leave for 2 to 3 mins 8) remove from heat 9) eat lol don't overcook salmon - many ppl tend to overcook it - i love mine medium - takes 5 mins to cook the whole thing hope that helped

not my recipe but was thinking about trying tomorrow Salmon ceviche Salmon * 300g salmon fillet, skinned * 1 red chilli, thinly sliced * 1 spring onion, thinly sliced on the diagonal * 1 fat garlic clove, peeled and thinly sliced * Small handful of coriander leaves, shredded * Small handful of mixed cress (optional) Dressing * Juice of 1 lemon * 2 tbsp light soy sauce * 2 tbsp sesame oil * Drizzle of olive oil * Sea salt and black pepper * Pinch of caster sugar 1. For the dressing, whisk all the ingredients together, season with salt, pepper and sugar to taste. 2. Place the salmon fillet in the freezer for 10 minutes. Slice the salmon thinly and arrange on serving plates, overlapping the slices very slightly. Scatter over the red chilli, spring onion and garlic. Spoon over the dressing and leave to marinate for 5–10 minutes. 3. Scatter the coriander over the ceviche to serve and garnish with mixed cress if you like.

If you have a Costco near to you, they do a great deal on Frozen Salmon fillets. All I do is bung them in the microwave and once there done add either lemon juice, sweet chilli sauce or tabasco sauce on them. MMMM, this is making my mouth water now.
