I'd presume that freezing whey would make difference to the protein content, much like freezing chicken or beef makes no difference to protein. Why were you thinking on making some whey ice cream? :-)

I've made whey icecream before, nice way to cheat.

Can make tofu and banana iceceam with whey and honey and toasted nuts, or make a custard based icecream and add whey to it.

Have yet to try and make a whey sorbet, but it'd be doable with some of that Reflex Whey Refresh

Its ok to freeze whey,
altho heating it past 60% might be counterproductive

Lol.

Tofu and banana - Take a block of tofu (go to a Chinese supermarket, not a normal one... can get 800g tofu for about £1.29) and some over ripe bananas.

Blend and add honey and toasted pumpkin seeds and pine nuts to taste.

I prefer to make the custard base Myself - 6-8 egg yolks, 250g sugar (Demerara or use ginger syrup from a stem ginger jar), 300ml double cream, 300ml milk, a vanilla pod or vanilla extract.

Mix milk and cream in a pan and toss in the vanilla. Heat gently til hot, and then whisk egg yolks and sugar together and pour over the milk whisking it in.

Return to the pan and cook lightly til it thickens.

One pan of custard!

Then let it cool a little and add your whey, and whisk in.

Put in a bowl in the freezer and take it out to whisk every 20 or so minutes til its ready. Or toss in an iceceam maker.

You can add other things to it like chopped ginger, strawberry pieces or the like.

I don't make it often as it's too tasty and not exactly clean lol
