Please Tell me your Burger Ideas. - 06 July 2008 15:50
After Seeing eagle1985's topic.

I would Guess

Lean Mince
2-3 Eggs
Herbs Spices

Mix in a bowl and make into burger shapes and fry ?

Or would it not turn out good?

Regards

Not exactly low fat, but now and agian a great treat is to hide a cube of "blue" cheese in the middle of the burger. As it cooks, the cheese melts and leaches into the meat for a fantastic taste!

you dont need the eggs mate. just press them into burger shape and they tend to stay together. id reccommend trying the 1/2lamb 1/2 beef mince ones that some one in the other thread suggested(cant rememr who) they are awesome though

When I made some for the first time the other day I used lean mince, 1 egg, chopped peppers and onions and some chilli powder. I then grilled them. They turned out well nice!

As I posted in the other thread:

250g lean mince
Half a red onion (finely chopped)
3/4tsp wholegrain mustard
1tsp Worcestershire sauce
A few drops of tabasco sauce
1 crushed garlic clove
Salt and pepper
1 small egg white

Mix the above together and make into 2 burgers. Then put them in the fridge for a while to allow them to bond together properly, before cooking however you like (I use a griddle). I love them in a Tesco large malted grain bap, with loads of salad, cheese, and bbq sauce.

They're DAMN good

I always blend up a slice of topside or rump. Tastes better than mince imo.

There's something very satisfying about grinding a slab of meat. It's easier to assess the meat/fat ratio to.

As for burgers, I don't really reckon there's any need for egg or breadcrumb type 'binding agents'.

Just squish them into patty shapes then leave them covered in the fridge to rest for an hour before cooking.
Ten thousand glorious years.
