my raw egg replacement recipe 21 January 2012 04:05 (permalink)
for the skimmers my recipe is at the bottom

an update to my last thread, about my addition of raw eggs in my diet. after having been enlightend by some good folks here, (one of the things I have always appreciated about MT) I've begun only consuming cooked eggs. I've also decided to go ahead and start cutting the yolks as well. So here's what I've replaced it with... I steam the egg whites in a stainlees steel cup. I do fourteen at a time, and then after cooking add half to 1.5 cups of milk and a banana. In my honest opinion it tastes far superior to many whey shakes I've literally had to choke down in years past. the eggs cooked in this manner are rather bland and easily assumed a nicely blended flavor with the banana which has the tendencany to give shakes a gelatinous banana lube (best I can describe it) which masked much of the residual egg taste. anyways that's my update on that topic. thanks to everyone that helped steer me to a more informed stance on raw eggs.

RECIPE :
7 egg whites/ steam cooked
1.5 cups milk
1 banana
blend until smooth... the taste isn't too bad at all, almost reminds me of banana pudding.

I've got a steel strainer/steamer basket that fits down on a big pot. I put my egg whites in a stainless steel cup, and place the cup in the middle of the basket, up and out of the water, I put about 3-5cm of water in the pot, put the lid on the pot and get it boiling and then turn it down to simmer for a bit, it puff all up when it's finished. there may be some fancy name this method, to me, steam cooked seemed appropriate.

Don't cut all the yolks dude, leave at least one in, lots of vits and minerals and only 5 grams of fat, cool to throw the rest away....

the problem is that it's the yolks contain a sulphur like taste upon heating, so when blending into a shake, the taste is hard to get past. cut the yolks and the majority of the egg odor as well as the stronger part of the egg flavor dissapears. the whites that come out in this method are quite bland and easily adaptable to my shakes, where as the addition of the yolks made it more of an endurance test, cut the yolks and I barely know they're there, it's my new favorite protein shake.

I know the yolks have some good vitamins and mierals but it mostly came down to flavor, and wanting to be able to work eggs consistantly into my diet. taste wise I can only eat so many whole eggs, for only so many days before I need a good break. the steamed egg white shakes are fitting me quite nicely.
