Hey guys, making a large stock pot ful of soup today, just wondering if i would be able to fit this into my regular BB diet as a source of vegetables and possibly protien/carbs too? As im not sure of the fat content of it. Very basic recipe..
 
1 Medium Chicken
Potatoes
Swede
Carrots
Leeks
Rice
 
Stock made using the chicken and then knorr stock cubes added for flavour. chop the veg up and bung it in along with the rice.
 
Is this healthy and good to eat as part of my diet?

    Sounds good mate, obviously you will need to take into consideration the amount of animal fat from the chicken. I am assuming you are using an already roasted chicken? A good idea would be to de-skin the chicken before adding it on so you will have less fat and the same protein content. You probably did that anyway.

    You can also make a very similar recipe using de-boned and de-skinned chicken, vegetables and a pack of dried scotch broth mix, making sure that you soak the dried mixture overnight and cook it first for about 30min then add the rest of the vegetables and the chicken and cook for another 30min. Great for those cold scottish nights....
