another tip is take them off the heat WELL before they are cooked and let the residule heat in the pan cook them as you stir. That way they are much much nicer to eat. throw in some veggies and meat at that time if you want, it will be like a scrambled egg omlette type thing.

I throw mixed vegetables, pinch of salt, paparika, pepper into liquid egg whites while they are cooking and also when its about finish I put one low fat cheese slice on top or sprinkle some low fat grated cheese. Also some times with all these, left over chicken from previous nights.... Huge brekkie and hug prottie!

I usually make mine with a nice helping of whole milk, a little butter and lashings of tomato sauce, on some linseed bread. Also add some baby spinach in as well tastes damn good, or peppers. Or adds some fresh mushrooms after cooked. One meal I like making now and again is a portion of basmati rice, when rice cooked, add soup (mushroom or chicken goes well) to rice until heated, then add the scram eggs, delish :)

There's a few different things I do with mine. Like Bill said though its important to take them off the heat or out of the micro while they're still a little slimey and let the heat still in the eggs finish cooking them through, that way they're don't end up dry and rubbery. So at the point of taking them out of the micro and they're still slimey try adding the following, stir in some nando's of your choice. Add some mayo and loads of ground black pepper. Stir in grated cheese. There are others, some of which others have already mentioned. I tend to not go with whats usually accepted by others as a good concoction. I've tried alsorts of strange ideas with my food just to keep it interesting. I've had to do the same with tuna before now as well. Tuna mixed with boiled eggs is one that my mates have commented on me being disgusting for before now lol.

If I want to make them a bit more interesting, I chop up half a red onion, 4 mushrooms, shallow fry them in a wok in a little olive oil, add 6 beaten eggs, scrambell all ingredients. Once cooked, put on a plate, grate some cheese on top, bang them under a grill for 30 seconds to melt the cheese.... lovely! Can add soy sauce too, but I find the cheese is enough to flavour it.

You could make them into an omelette instead of scrambled. Just pour into a hot pan and let cook and then put ingredients into the centre of one half. Finely chopped peppers or baby spinach. Cheese of course works well if you eat it. You can always make them sweet by adding vanilla protein powder. I used to beat my eggs (or just whites) with vanilla protein powder and then pour into a non stock pan - make sure it's hot. Then you can eat topped with fruit if you eat it or spread with a little peanut or other nut butter.

Nikki You could make them into an omelette instead of scrambled. Vary the way you make them, the different textures will keep them interesting to eat. Eggs also taste very different depending on how they are cooked.
