50g of green and red peppers
25g rapeseed oil
10g ginger
10g garlic
5g orange zest
5g chilli
20g blackbeans
25g spring onions
50g diced onion
35g oyster sauce
30g chu hou
15g chicken stock
5g sugar
235g water
10g cornflour
20g sesame
Preparation 1. Finely chop and quickly stir fry the fillet steak, set aside
2. Heat vegetable oil in wok, add ginger and garlic and fry over a high heat until starts to become golden and toasty
3. Add the orange peel to wok and fry until it releases citrus notes
4. Then fry chilli, black beans and spring onions, for 20 seconds
5. Add the chopped onions and fry lightly to retain bite
6. Add the 2 paste chu hou sauce, oyster sauce, water, sugar and chicken stock
7. Add the chopped green peppers and fillet steak
8. Finish with sesame oil and cornflour.
