High hematocrit is a double edged sword, yes it can help transport oxygen to the muscles hence why pro cyclists and endurance athletes use EPO but this means thickening the blood, if you're susceptible to blood clots this's not a good thing, add in that a lot of AI's can raise cholesterol levels = double bad. I'm just giving you this info, you'll probably be fine without donating but hematocrit and raised lipid values are things to be aware of when cycling if you were under a sports GP these are the things he would be monitoring.
If you do feel the need to donate while on cycle i'd do it 1/2-2/3's the way through.
