Chicken Satay Stew

Hi All
 
Would appreciate any comments on a particular favourite recipe of mine
 
Ingredients
8 chicken thighs
2 tsp olive oil
1 chopped onion
3 chopped garlic gloves (I use 3 tsp of the lazy garlic)
3cm of chopped ginger (again I use 2 tsp of the lazy ginger)
2 hot chillis
2 bay leaves
2 tsp of paprika
200g can of chopped tomatoes
150g of chunky peanut butter
250ml of chicken stock
salt and pepper
 
Season the chicken thighs with salt and pepper and brown in a pan with the oil.
Remove from the chicken from pan and heat the onions for 5 minutes until they are going soft. Add the garlic, ginger, chilli's and bay leaves and heat for another 5 minutes.
Remove the pan from the heat and stir in the paprika. Add the tomatoes and return to the heat.
Cook for a couple of minutes and add the peanut butter and stock.
Stir well and make sure the peanut butter is fully mixed in.
Return the chicken thighs to the pan, cover and cook for 25 minutes. Alternatively, I put the whole lot into a slow cook and leave in there for a few hours.
 
I either serve this with brown rice or once cook remove the bones from the chicken and serve like a thick soup.
 
I have tried to work out the nutritional info based on 2 125g thighs per portion
Calories - 736
Protein - 71.3
Carbs - 8.4
Fat - 45.6
 
Obviously for cutting the meat could be replaced with breast for lower calories and fat per portion.

    Love the idea of cooking up a satay.
     
    Might try to modify this a bit to give me a weeks worth of lunches!
