Chook & Rice with a twist
It well nice, filling and cheap. Still tastes great re heated in the micro wave.
500g 2 Breast of Chicken
1/2 Cup Basmati or brown rice
1 Medium onion
1/4 cup walnuts peices
1/4 cup raisin or sultana's
1 cube of chicken stock
1 bay leaf
1 bacon rind (sliced/choped)
pre cook the chicken Grilled is best.
Fry the onion and Bacon together in a non-stick pot, once onion is transparent take the pot of the heat and add the rice, stock and bay leaf add Boiling water (the amount should cover everything by 1 inch, return the pot to the heat and cover, simer on a low heat until water has avaperoated (approx 6-8 minutes).
Once cooked take of the heat, tear up the cooked chook and put in the pot with the rice, stir the chook in and cover for about 2 mins, this is to warm the chiken.
Serve Up, Yup Yup.

Serving - Protien 25.7, Carb 56..8, Fats 13.8 (good fats from the walnuts)
