off the top of my head its primary effects are on glycogen and its action of inhibiting glycolysis (also increasing insulin sensitivity) it also inhibits lipogenesis by decreasing SREBP1 and malonyl-coa. It helps us burn free fatty acids aswell as aposed to glucose espcially as the substrate as used by the liver.
as a more general overview acetic acid is anti inflammartory, anti viral, an antioxidant and can decrease LDL cholesteral. To a lesser extent is also effects leptin, AMPK (amp activated protein kinase) , reduces gluconeogenesis. My only problem with it is for those with digestive problems it is probably something to steer clear of as it not only blocks the formation of enzymes (including lactase) but will bloat you. However overal as a partitioning tool it owns.

so how does it do all that as its simply a acid with no amino acid profile and virtually no nutritional content i.e. 99.9% water

if thats the case than cider vinegar isnt necessary as acetic acid is in your standard non brewed vinegar which is around 15p a litre. So in short, same benefits youll get from using normal nonbrewed vinegar vs cider vinegar when you sprinkle it on your food. No need for cider vinegar supplementation
