Devilled Kidneys

I know some people gag at the thought of Kindney, well, I dont

Devilled Kindney and Wholegrain Mustard

I tsp Olive Oil.
I pack of Lambs Kidneys (roughly six kidneys).
1 tbls desert spoon Tomato Ketchup.
I tbls Woestershire(sp)Sauce.
2 tsp Whole Grain Mustard.
1/4 tsp Tabasco Sauce.
Chili Flakes to taste.

Cut the kidneys in half (they look like a beans, so cut through the centre, longways) and remove the little fatty pounch from the middle of both segments of all the kidneys, Heat a pan or Wok and add the Olive oil, sear the kindneys for a couple of minutes on both sides until the are browned. Add the other liquid ingrediant and cook for a further 5 finutes or until there is no more red (blood) in the kidneys. they will round and become a little tougher in texture ....

Served with:
soft boil eggs.
toast some Wholemeal bread (2 slices).

Cut eggs in half and place on toast (the eggs if done correctly will run all over the toast) cover with the kidneys and gravy which was made whilst cooking them,
