Gluten intolerance???

I've just had a client ask me what is the best way to structure her new 'healthy eating'. She is Gluten intolerant, therefore rice, bread, pasta...all wheat based foods are out of the question, can anyone suggest any nutritious balanced meals/snacks around 350-400 calories?

Thanks

Shane
