Help with rejigging diet

Ok i been following this diet and have stayed the same weight for quite some time.

Could i have some help with it:

Cardio is 45 minutes fast walking monday - friday

Weight day (mon/wed/fri)
10:00
25g whey, 4 egg whites and 1 whole egg with spinach
3 weetabix in water with a handful of berries

13:00
150g lean mince steak fried in olive oil
tomatoes, onions, mushrooms

16:00
3 slices of burgen and voyels linseed bread
tin of tuna with 2 tblspn of cottage cheese
Cucumber
Small banana

17:15 train

18:15
45g whey
25g dextrose
25g maltodextrin

20:00
150g chicken
100g basmati rice or 120g wholewheat pasta
Chinese five spice, chicken spice, soy sauce
Carrots and green beans

23:00
Tub of quark, sachet of options with 40g peanut butter
or 2 of gaz's protein bars
or 40g bedtime extreme and handful of pumpkin seeeds with 5g wheatgrass

02:00
70g mackerel
80g chicken
peppers

Thai boxing day (Tues/thursday)

11:00
Oat pancakes
90g oat powder
25g whey
5 egg whites
small amount of olive oil to fry with
splenda
Handful of berries

14:00
150g lean mince steak fried in olive oil
tomatoes, onions, mushrooms

17:00
3 slices of bugen and voyels linseed bread
tin of tuna with 2 tblspn of cottage cheese
Apple
Cucumber

18:15 train for an hour

19:30
40g bedtime extreme
3 weetabix

22:00
Tub of quark, sachet of options with 30g peanut butter
or 2 of gaz's protein bars
5g wheatgrass

01:00
150g salmon
Broccoli

Weight has stayed the same on that diet and i have actually put on weight with drinking stella on a saturday night and a huge binge meal on a sunday.

Any comments welcome

Also how would i eat on the saturday and sunday?

    Your diet looks ok mate.

    Might be just worth reducing portion sizes on some of your meals to reduce calories.

    Diet looks pretty solid mate, but what you trying to do cut or bulk? just reduce/increase portion size depending on your goal. You should really try to eat the same on the weekends, i know its pretty difficult! just stick to it as best you can, one cheat meal a week should be alrite.

    Reduce portion sizes from all meals then?

    By what to eat on weekends i meant where to reduce carbs and replace with fats due to no training!???

    For the weekend i think the best place to reduce the carbs is to get rid of the 3 slices of bread and replace with a big green salad. then reduce the serving of rice/pasta.

    For teh rest of the week, yeh just reduce portion size except in the pre/post workout meals, think you should keep them the same.

    Ok so I am gonna continue for two weeks without the beer at weekends and whilst reducing the size of the cheat on a sunday.

    I have a week off training this coming week so can anyone tell me how to do it... I'm gathering I just have carbs after morning cv and protein and fat for rest of day.

    One thing i don't understand though is if i replace carbs with fats, then the meals will be of similar calories still, so what is the purpose of reducing my carb meals when not training to fat meals if they equal roughly the same calories?

    So if i try the above for 2 weeks and still no weight loss should i take away 1 weetabix from breakfast, less olive oil with steak, 1 slice less of bread before workout, and maybe less carbs ppwo? Sound ok?
