Those rolls are great! Triangular ones with seeds on them. Weren't they something like 3g of carbs each? Everytime I go they are sold out though. Need to go early I think.

8.5g carbs per roll 😎 maybe depends on the store, mine always seem to have them - to be fair the average Basingstoke resident doesn’t strike me as someone that cares about low carbs or extra protein 😂

Today it was all about mushrooms

Balsamic and Olive Oil marinaded mushroom slices



I miss bread. I used to make my own often (I have a sour dough starter named Hugh that's nearly 9 years old!)

Anyway, one of my guilty pleasures in life was a bit of crusty bread(tiger is good) dipped in good quality EVOO and balsamic.

Well this is nothing like that at all!!... But it makes a suitable replacement and does hit that craving spot I had somewhat. Really good for a snack between meals on its own (kcals only dependant on how much dressing you use) but also good as a salad base with some buffalo mozzarella, salty anchovies, sundried tomatoes, with a bit of rocket for greenage


Creamy Gorgonzola Mushrooms




This is fantastic!

300g Mushrooms stir fried with 20g butter and 2 cloves of garlic until juices start flowing. Then mix in 50ml double cream and 100g of Gorgonzola (would work well with a Stilton or a Roquefort- blue cheese basically) and cook until sauce is as thick as you want it..

Makes 2 portions, per portion:

12g Protein
1g Carbs
37g Fat
394kcal

This can be made in bulk and portioned out and put in fridge for when needed.

Stick in a ramakin with some cheese ontop and grill for a tasty side. Or top a steak with it. Or have it as a pasta sauce..

A pasta sauce? Pasta?

I'm really not keen on those zero carb noodles you get. But I found this in a 'health food shop'. High in protein, low in carbs and mixed with the Gorgonzola mushroom sauce, I may as well be sitting squaffing pasta in Milan!



Per 50g serving

21.1g Protein
5.7g Carbs
3.5g fat
162kcals


(I apologise in advance if anyone is offended by the word Vegan or Gluten free on the box.. I certainly was! )

Bacon Wrapped, Butternut squash layered, Beef-loaf

750g 15% Fat minced Beef
50g Ground Almonds
40g Grated Parmesan
1 TBS Balsamic Vinegar
1 TBS Worcestershire Sauce
Salt
Black Pepper
1 TSP mixed Italian dry herbs
Chopped parsley
Chopped Garlic

Get stuck in to the above with your hands until evenly mixed.

Tesco and Sainsburys are now stocking these Vegetable lasagne sheets.. Courgette and Butternut. I used butternut squash as courgette would be too watery for this plus the squash gives a bit of sweetness to the loaf. So much easier then getting the mandolin out!

For a standard loaf tin you need 4 slices which is 150g



Take your load tin and layer it with streaky bacon overhanging half a rasher over the sides. 2 packs did it which was 550g

Divide your meat mixture into 3.

1 layer of meat, 2 slices butternut, repeat. Make sure to push everything down between layers. Once final meat layer goes on, wrap up the meaty parcel.

Stick loaf tin in a bain- Marie. Basically a casserole dish filled with water to just below the loaf lip. Put that on a baking tray and cook slowly for 2.5 hours in a low oven (gas 2)

All the fat from the beef, bacon and cheese will come out and start to mingle together. This keeps its moist and tasty. But I will admit at the end, you need to pour off the fat that has come out. I poured off 75g of fat (675 kcals) which I have subtracted from Macros.

Per 1/4 Loaf

61g Protein
4g Carbs
43g Fat
648 kcals

Last night I had a sausage party!

Sausage Goulash

A Hungarian classic, but with sausages!

12 chipolatas
10 frankfurters
100g chopped chorizo
60g red onion
100g Peppers
400g can/carton chopped tomatoes
1 TBS paprika
Salt and pepper
Tabasco to taste
150g Full Fat Greek Yoghurt

Brown sausages, take out of pan. Sweat down onions 2 min, add chorizo and peppers 2min, add paprika salt and pepper then your tomatoes and Tabasco. Fill up carton or can twice with water and add. Halve sausages and add. Reduce until thick. Take off heat and stir in yoghurt .

Makes 4 portions, per portion

36g Protein
12g Carbs
56g Fat
699kcal

I served mine with swede and broccoli mash.
