I’ve finally cracked it ! Keto bread!
I cannot believe how good this turned out.
First you need dough. Fat Dough
250g Grated Mozzarella
150g Ground Almonds
1 Large Free Range Egg
1 tsp Baking Powder
Mix into dough. If it gets sticky wack in the freezer for 5 min
You now have fat dough and the world is your lobster(butter smothered of course!)
I made standard rolls. The mix above makes 4. Bake on Gas 4 for about 15min.
Just look at them! And the fluffiness! The actual bread like texture.. it reminds me of a scone.
Next week I’m going to see how this dough holds up as a pizza base.
But the possibilities are endless. A few careful tweaks and additions and you could have:
onion bagels (cream cheese and salmon)
Cinnamon Rolls(sugar free icing is on my list to get right)
proper cheese scones (gruyere or manchego I think will go well),
sweet scones with clotted cream and low carb compote,
also I’m going to try see how little gnocchi turn out with this dough
