Lovely Chicken Fajita - Chinese style
I had some chicken fajita's (wraps) yesterday...damn they were good so I have to share the recipe...
Take 2 good size chicken breasts and chop up into small pieces.
Cut 4 cloves of garlic finely and add to the raw chicken. Add some finely chopped fresh corriander. Then teh good bit...dump some Soy Sauce, Oyster sauce and a drizzle of Sesame seed oil. Mix it all up and stick it in teh fridge for a half hour to marinade (the longer the marinade the better)
Cut up finely some cucumber, carrots, lettuce, tomato, bell peppers, (any greens really) and put ina bowl. Add loads of pepper and lemon juice.
Heat a non stick pan and add 1 tablespoon of olive oil. Once heated chuck in teh chicken and let it cook for around 12-15 minutes until chicken is done. Stir constantly so you dont get any sticing to tehnon-stick pan LOL.
You need wraps, can get em from any superstore dirt cheap.
Serve up food, take a wrap, add the chicken, add some salad, and roll up and munch away. I had 6 last night!!!
