Low fat. protein packed meatloaf

Meatloaf - Serves 4 normal people, 2 with big appetites or 1 for an absolute beast
500g 5% lean Beef Mince
250g 2% lean turkey mince (Aldi)
Red pepper
Spring onions x6
Red Onion
2 carrots diced
50g of panko breadcrumbs 
2 eggs
2 tbsp Tomato Ketchup (Aldi)
Clove of garlic crushed
1 tbsp Mixed herbs
1 tbsp Paprika
1 tbsp
1. Mix both minces together in a large bow along with the herbs and spices. Generous tablespoons
2. Add red pepper, spring and red onions
3. Add garlic, breadcrumbs, garlic is optional but I put some in. Doesnt make a massive difference
4. Finally add breadcrumbs and crack 2 eggs and Pour 2 tbspof tomato ketchup over the mix. Tomato puree will do also.
5. Mix the whole lot together for a couple of minutes ensuring everything gets evenly spread. Try to compact the raw loaf as much as possible.
6 Put the meatloaf into a covered casserole dish, or a baking tray covering the loaf in tinfoil
7. Cook for 1 hour at 180 degrees, then remove the lid (or foil) and cook for another 30 mins to give the meatloaf a crusty outside. You can up the temperature if you want a really crispy edge but dont risk burning it
Thats it. It should be cooked through although check if you have a slow oven. I made mini baked potatos with 2 sprays of frylight and a bit of side salad for extra taste. Put potatos in at the same time as you uncover the meatloaf so all finishes together

With the lack of fat in that isn’t it a bit dry? Does it need gravy?

More importantly is a meatloaf even a meatloaf if it’s not wrapped in bacon?

I have no idea why I have not yet tried meatloaf, it sounds awesome. Will have to give this a go.
