Mixing Scrambled eggs

Hi all

as my mornings are usually quite rushed...

if i mix up some scrambled eggs on an evening, can i then leave this mixture in the fridge overnight before cooking the following morning?

if so, is there a limit to how long this could be kept in the fridge??

Cheers

I don't think the eggs will go bad in only one night in the fridge. Just do what I do - smell it before you eat it!

Cover it up and keep it in the fridge, it will be fine. As long as you just leave it over night and not for a few days.

With scrabled eggs I throw the pan on the hot plate and turn it on. Then crack eggs on to it while it heats up and then scramble. You can then add parsley, pepper etc. It is quicker than mixing it before pouring into a hot pan.
