Need help with pancakes

Allergic to egg so I can't eat the pancakes listed on this forum cos they have about 8 eggs per pancake. However OK with the british style pancake day pancake cos each pancake usually has one egg (+half lb flour, pint of milk n pinch of salt) and I don't seem to notice it much. Is there a high protein n fairly low fat variation on this? Maybe replacing most of the flour with whey protein?

can anyone help?

    You can replace some of the flour with whey. The problem I've found is that the consistency of each whey is different and absorbs liquid differently. So you'll just need to experiment until you find one that isn't too sticky. But spray your non-stick pan with plenty of cooking spray because the whey gets REALLY sticky on the pan!!
