Pasta Carbonara

Contrary to popular belief, carbonara is not a cream based sauce. The word Carbonara comes from the Italian for coal, due to the black pepper in the dish. Here is my take on the classic...

Fry 150g of low fat ham in 10ml of olive oil. When browned, add a serve of al dente pasta (a flat type such as taglitelle is best) and mix. Remove from the heat and stir through one beaten egg and lots of black pepper.

It's better with some parmesan cheese added at the end also, but that's up to you, I think it tastes great without. I don't think just adding the egg white will work though.

Try it, it's buona.

    One of my most favourite dishes when i eat out is spaggeti carbanara, nice alternative recipe thanks

    Well proper carbonara uses pancetta (similar to streaky bacon) instead of ham and butter instead of olive oil, but it's pretty close and tastes just as good IMO.

    Cheap, easy and quick as well.
