Recipe: Make Ahead Curried Beef

The flavour of this curry improves if it is made the day before serving. Store in the refrigerator or freeze, without the rice.
INGREDIENTS: For 4 servings1 & 1/2lb of beef (chuck, shin or diced stew) , 2 tablespoons of vegetable or corn oil , 1 large onion chopped , 2 carrots chopped , 1 teaspoon of turmeric , 1/2 teaspoon of hot chilli powder , 1 & 1/2 or 2 teaspoons finely chopped ginger root , 1 garlic clove crushed , 1/2 teaspoon salt , 14oz (397g) can chopped tomatoes , 250 ml (8 fl oz) beef stock , 8oz of rice of choice. PREPERATION: 1. Heat oven to 180C (350F/Gas4). Trim fat from meat and cut into cubes if not done already. 2. Heat Oil in a flameproof casserole. Add beef, onion and carrots and fry over medium heat for 3-4 minutes, stirring. Add spices and garlic and cook for 5 mins, stirring frequently. Add salt and tomatoes. 3. Stir in stock and bring mixture to the boil. Remove from heat, cover and cook in the oven for 2 hours, stirring occasionally. 4. Towards the end of cooking time, cook rice and serve the curry hot. Worth the 15 minutes preperation time and provides 610 calories per serving.
