Something for the low-carbers - Apricot muffins!
1) Buy a bag of Gram flour from Tesco (99p/kg) 2) Buy a jar of Splenda granular (£2.13 at Waitrose).
Take 2oz of butter and nuke it in a bowl until soft. Add 4oz of gram flour. Mix butter and flour until crumbly. Add 4oz chopped dried apricots. Add 1 teaspoonful of mixed spice. Add 1/2 teaspoonful of bicarbonate of soda (not
baking powder). Add Splenda to taste (~1 dessertspoonful). Mix. Add 1 whole egg (minus shell, silly!). Mix. Add double cream and water and mix until suitable consistency is reached. Leave for a while to allow the flour to soak up fluid. Add more fluid if it gets too thick.
Butter a baking dish. Spoon the mixture into the dish in dollops and bake for ~15 mins at gas mark 4.
Gram flour (used by asians to make bhajis) has a very
low GI and is high in fibre and protein, so it doesn't significantly disturb blood sugar. As gram flour is made from the channa dahl bean (a cross between the chick pea and the lentil?), don't stray too far from a loo if you eat too many muffins, if you get my meaning!
