Sweet potato fries perfected

I think I've just about done it.
 
Pre heat fan assisted oven to 180'C and peel sweet potato. Chop into half then chop to desired thickness, making sure all are roughly the same size to avoid burning smaller pieces. 
 
Get a small bowl and add 1 tea spoon of rapeseed oil, 1 tablespoon of red wine vinegar, 1 teaspoon of tabasco sauce, 1 teaspoon of Worcestershire sauce a good sprinkling of black pepper and if you like it hot dice a full bird eye chilli and mix within the bowl until all mixed well.
 
Line a baking tray with foil and spray with fry light to prevent sticking. Take the sweet potato fries and dip them fully into the mixture before placing on the baking tray evenly and so they aren't touching. Place tray in the oven and set timer to 20 minutes. Once 20 minutes is up turn the fries and replace in the oven for a further 20 minutes.
 
After the full 40 minute duration you will have small fingers of joy - and good carbs too.
 
 
Serving suggestion:
 
I chicken breast cooked in griddle pan sliced into strips, when nearly cooked add sweet chilli sauce until caramelised and beautiful. Broccoli slow cooked until soft.
 
Feels like a cheat meal but hits all the right spots with 44g protein, 18g carbs, 10.5g fats

They sound great . I love sweet potato I do something similar but keep the skins on I like the skin.

Can we see a picture of the finished product? I want to see how thick you are slicing these.

They sound great . I love sweet potato I do something similar but keep the skins on I like the skin.


Me too: I like the taste and texture of the skins and they also contain a lot of nutrients.
The skin of a potato contains a higher density of nutrients than the flesh.

Cheers for the comments chaps.
 
I have tried them with the skin on but I always seemed to burn the outside and undercook the middle. Probably just me. After all Yorkshire men should only eat mushy peas and dripping & bread right. 
 
Ok some snaps of the dish suggested and through cooking. I decided to do it again so I could get the snaps on for you  to see how they look.
 
* Slight difference I added garlic puree *
 
It would appear I can't upload photos on to this forum, might be because I am relatively new. Anyone got any ideas?

Sounds good - I'm assuming they're more of a soft texture than crispy fries? Pretty sure the only way to get the latter is a deep fat fryer...

They are crispy on the outside and soft inside - the longer they are left in the crispier they get just make sure they are all the same size otherwise the little ones end up like charcoal. From experience.

These look amazing! I always add a pinch of flour too, it makes them go crunchy on the outside
