Tuna And Couscous fishcakes

Makes 8 cakes
225g couscous
400g tuna can chuncks
1 large egg, lightly beaten
2tbsp finely chopped coriander
1tbsp olive oil

1. Prepare couscous according to packet instructions and allow to cool slightly. Drain tuna and tip into bowl. mix in couscous, egg and coriander. Season with ground black pepper. Shape into approx 8 cakes Chill for 30 mins if you have time.

2. In a frying pan, heat oil and cook fish cakes for 3-5 mins each side, till heated through.

I found spicy couscous tasted the best.

    Depends on your taste but the flavored one's are really nice.

    I think couscous is just little pasta. I wonder if there's whole wheat couscous.
