For so long I've missed muffins but here is a great substitute I made by accident when I put too much liquid in my protein pancake
2 egg whites, 1 yolk
1/2 scoop of protein powder, vanilla
1/2 cup soymilk or milk
1/3 cup oatmeal
some raisins and cinnamon
just blend everything up and pour it in a pan over medium heat. keep stirring around in pan until it thickens up a bit, about 4-5 minutes.
Then transfer into a bowl and stick in the freezer for about half an hour, then eat with a spoon, its the same texture as a muffin with no white flour, sugar, butter or oil and lots of protein! This makes about a cup serving. Nutrition breakdown: about 350-400 cals and 25g protein, 7g fat. Next I wanna try blueberries!

Sounds interesting, I just tried out protien pancakes today, maybe I'll try this next.

This does sound interesting. Normally I like hot muffins, but I guess frozen ones could taste great!
