What do you have for Mixed veg

Im currently on a cutting diet
My protein and carbs are coming from meat and either rice or oats however i have been neglecting it slightly and leavign the mixed veg im supposed to have partly out of laziness.

I was interested in suggestions of what people have sepecifcalyl what is easy to prepare or dosent require preperation i.e. cheap and easy cold!

I currently rarely have veg or fruit throguh the week which is causing me not to stick to my diet and also miss out on several nutrients I no doubt need.

I get one of those stir fry packs of ready chopped veg, it's got mange tout, carrots, peppers, bean sprouts, cabbage, bamboo shoots etc. Mix that in with some chicken breast, garlic  and one of those sharwoods stir fry sauces.

I use frozen veg a lot, easy and quick.

Salad is the obvious suggestion for cold veg!

Something I make occasionally - is to lightly cook some broccoli florets in the microwave and then refresh straightaway in cold water.  Then when cold, make a dressing for it of olive oil (I use garlic infused), balsamic vinegar and can put fresh sliced garlic in it if you like it garlicky!
