Dehydration will not cause pain, but severely impacts your recovery.
The soreness you describe occurs more with volume than weight. Anytime you increase the volume significantly you will get DOMs. BCAAs pre and during your session will help, but not really necessary unless it's a real problem.
Another tip is wearing light compression to bed. After a leg hypertrophy session, I wear near full length leg compression overnight. Stop the dreaded midnight cramps, plus the increased blood flow speeds up recovery. You'll feel like you have new legs by the morning =D
